Madeleine Cookies

 
 
Ingredients:

1 1/2 cups flour

1 1/2 teaspoons cinnamon

1/2 teaspoon baking soda

1/2 cup vegan margarine, softened

1/2 cup sugar

1 ripe banana, peeled

1 teaspoon vanilla

1 3/4 cups shredded zucchini

1 cup quick oats

1 cup chopped pecans (optional)

1 cup vegan semisweet chocolate chips (optional)
Directions:

Preheat your oven to 350, then line a baking sheet with parchment paper.

Combine flour, cinnamon and baking soda in a bowl.

In a bowl, beat margarine and sugar until well combined, then add banana and vanilla, stir to mix well.

Add zucchini then gradually mix in flour mixture.

Stir in oats, nuts and chocolate chips.

Spoon tablespoons of dough 2 inches apart onto a baking sheet.

Bake for 9 to 11 minutes or until they cookies are light golden brown around edges.

Allow cookies to cool completely before serving. Enjoy!
