Easy Orange Sesame Chicken

 
 
Ingredients:

For the Chicken

2 boneless, skinless chicken breasts

2 cups flour

2 tsp sea salt

2 tsp pepper

1 tbsp paprika

1 tbsp ground ginger

3 eggs

3 tbsp water

For the Sauce

3/4 cup orange juice

zest of 1 orange

1/4 cup honey

1/4 cup ketchup

2 tbsp rice vinegar

1 tbsp corn starch

2 tsp brown sugar

2 cloves garlic, minced

1 tsp sesame oil

1 tsp sesame seeds

For the Noodles

1 bag fresh asian style noodles

2 tbsp sesame oil

3 tbsp teriyaki sauce

1 bag of Asian Sesame Salad Kit

salt and pepper to taste

For the Garnish (Optional)

Cashews, chopped

Toasted sesame seeds

Thinly sliced green onions
Directions:

Split chicken breasts in half and pound between plastic wrap until about 1/2" thickness.

Whisk together dry ingredients and place in a pie pan.

Whisk together eggs and water and place in a second pie pan.

Dip chicken pieces into flour mixture, then into egg wash, then back into the flour.

Fry chicken in oil 3 minutes per side.

Place cooked chicken on a wire rack and set aside.

For the Orange Sauce

Whisk together ingredients in a saucepan, then bring to a boil and reduce to simmer for 3 minutes, until slightly thickened.

Reduce heat to low to keep warm.

For the Noodles

Follow directions on a bag of noodles

Heat oil in a large pot over medium heat.

Add noodles, teriyaki sauce and vegetables.

Toss to coat and continue until vegetables have started to soften.

Season with salt and pepper, to taste.

To Assemble

Fill four bowls with salad and noodle mixture.

Slice cooked chicken into strips, then put one breast on each bowl.

Drizzle orange sauce over the chicken.

Top bowls with chopped cashews, toasted sesame seeds and green onion. Enjoy!
