One Pot Beef Stroganoff

Servings: 4 ~ 6
Ingredients:
2 Tbsp unsalted butter
12 Oz mushrooms, sliced
1/2 medium onion, diced
salt and pepper, to taste
1 Lb ground beef
2 cloves garlic, minced
1 tsp dried thyme
3 Tbsp flour
1/4 cup white wine
4 cups beef stock
2 Tbsp Worcestershire sauce
1 Tbsp Dijon mustard
8 Oz egg noodles, uncooked
1/2 cup sour cream
2 Tbsp chopped parsley leaves
2 Tbsp unsalted butter

Directions:
Melt butter, add mushrooms and onion and cook, stir occasionally, 3-5 minutes
Season with salt and pepper, to taste.
Add ground beef and cook 3-5 minutes.
Stir in garlic and thyme and cook 1 minute.
Whisk in flour and cook 1 minute.
Stir in wine, scrape any browned bits from the bottom of the skillet.
Add beef stock, Worcestershire, Dijon and egg noodles.
Bring to a boil; cover, reduce heat and simmer, 10 minutes.
Stir in sour cream and cook 2 minutes.
Serve garnished with parsley.
