Apple Fritter Bread

 

Ingredients:

1/3 cup brown sugar

3 tsp cinnamon

2 1/2 apples, peeled and rough chopped

2/3 cup + 3 tbsp granulated sugar

1/2 cup softened butter

2 eggs

1 1/2 tsp vanilla

1 1/2 cups flour

1 3/4 teaspoons baking powder

1 tsp salt

1/2 cup + 3 tbsp milk

1 cup powdered sugar

Directions:

Preheat your oven to 350, then prep a 9" x 5” loaf pan with a non-stick spray or line it with parchment paper.

Mix 1/3 cup brown sugar and 2 tsp cinnamon in a small bowl, and set aside.

Toss cubed apples with 2 tbsp granulated sugar and the remaining 1 tsp of cinnamon in a separate bowl, and set aside.

In a stand mixer or with a hand mixer, beat butter and sugar together until fluffy, for 2 minutes.

Add eggs and vanilla, and continue to mix.

Mix flour, baking powder, and salt in a separate bowl, then slowly add to the creamed butter mixture until fully combined.

Add 1/2 cup milk into this mix until smooth.

Pour half the batter into the lined loaf pan, and add half of the apple mixture to the batter in the pan.

Sprinkle half of the brown sugar + cinnamon mixture on the apple layer.

Repeat with the remaining batter and top with remaining apples and brown sugar mix.

Use a knife or toothpick to gently swirl the apple mixture into the batter, ensuring the apples are on the top layer or patted into the batter.

Bake until a toothpick inserted into the middle of the loaf comes out clean, for about 1 hour.

Allow the loaf to cool on a wire rack after baking.

For the Icing:

Combine and mix powdered sugar with the remaining 3 tbsp of milk.

Add more milk or powdered sugar to reach the desired consistency.

Drizzle loaf with glaze. Enjoy!
