Coffee Lover's Cupcakes


1 3/4 cup flour

2 tsp baking powder

1 1/2 tsp cinnamon

1/4 tsp salt

1/2 cup olive oil

3/4 cup milk

1 egg

1 tsp vanilla

2/3 cup sugar

1 1/2 cup apple, chopped

1/2 cup hazelnuts, chopped
Save some to top muffins

Preheat your oven to 350, then lightly oil a 12 cup muffin pan.

In a large bowl, mix flour, baking powder, ground cinnamon and salt.

In another bowl whisk oil, milk, egg, vanilla and sugar.

Add wet ingredients, apple and some of the nuts into the dry and mix until just combined.

Pour batter into muffin cups and top muffing with reserved nuts.

Bake for 22 minutes or until a wood toothpick comes out clean.

Allow muffins to cool 5 minutes in the pan, then transfer to a cooling rack. Enjoy!
