Apple Oatmeal Bars


1 cup almond milk

½ cup peanut butter

1 tsp vanilla

1 egg

½ cup maple syrup

1 ½ cup apple, finely diced (like Pink Lady apples)

2 cups oatmeal

1 tsp cinnamon

1 ½ tsp baking powder

Preheat your oven to 350, and line a 9" × 9" baking dish with parchment paper.

Whisk almond milk, peanut butter, vanilla, egg and maple syrup, then fold in diced apples.

Add oats, cinnamon and baking powder and stir until combined.

Pour batter into your dish and place in the oven.

Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean.

Allow to cool before removing from dish, cutting into squares and serving. Enjoy!
