Avocado Strawberry Pasta Salad



For The Salad:

8 Oz. cooked pasta

1 cup fresh arugula

1 cup sliced strawberries

3 strips of bacon, cooked and crumbled

1 avocado, diced

1 teaspoon garlic powder

fresh mint leaves for optional garnish

For the Balsamic Dressing:

2 tablespoons balsamic vinegar

2 tablespoons olive oil

1 tablespoon mustard

1 tablespoon honey

1 teaspoon dry basil

salt and pepper to taste


For the Dressing:

In a small bowl, add balsamic vinegar, olive oil, mustard, honey, dry basil, salt, and pepper.
Whisk until the mixture is combined, then set aside.

For the Salad:

To the cooked pasta add arugula, strawberries, bacon, garlic powder, and avocado, then drizzle with balsamic dressing and toss.

Allow salad to chill in the refrigerator for at least 1 hour, then garnish with mint leaves and serve. Enjoy!
