Bacon Wrapped Chicken with Avocado Salsa

Ingredients:
For the Chicken
4 chicken breast
8 slices bacon
1 tablespoon cajun seasoning
1 teaspoon cumin
1/2 teaspoon garlic powder
For the Avocado Salsa
1 cup tomatoes, chopped
1 cup avocado, chopped (about 1 large)
1 to 2 tablespoons green onions, sliced
1 to 2 tablespoons cilantro, chopped
1 teaspoon lime juice
salt and pepper to taste
Directions:
For the Chicken
Preheat the oven to 350.
Combine spices in a bowl, then rub the chicken breast with spices to cover them.
Take a piece of bacon and carefully stretch it as far as you can without breaking it.
This helps the bacon cook evenly and reduces how much the bacon will shrink as it cooks.
After stretching carefully wrap the bacon around the chicken breasts.
If you are using large breasts this will take two slices, if you are using small breast it may only require one.
Heat a skillet to medium heat and sear the bacon wrapped chicken for 2 to 3 minutes on each side.
Move the chicken to the oven and bake at 350 for 20 minutes, or until it reaches 165 with a meat thermometer.
Allow the chicken to rest at least 5 minutes before slicing.
For the Avocado Salsa
While the chicken is cooking, combine the avocado salsa ingredients.
Top the chicken with the salsa just before serving. Enjoy!
