Baked Macaroni and Cheese


3 cups chicken broth and 3 cups water
(to boil macaroni)

3 cups macaroni (uncooked)

2 tablespoons butter

2 tablespoons flour

1 cup chicken broth

1/2 cup half-and-half

1/2 cup milk

1/2 cup cream cheese, softened

4 cups shredded cheeses (sharp cheddar, swiss, mozzarella, gouda, and or muenster)

1/2 teaspoon black pepper

A of dash paprika
Preheat oven to 350°F.
Meanwhile, combine water and chicken broth and bring to a boil.
Add macaroni and cook 7-8 minutes.
Drain macaroni and set aside.
Melt butter and whisk in the flour. Cook whisking constantly,for about a minute.
Whisk as you add in 1 cup chicken broth, half-and-half, and milk; continue whisking until fully combined.
You want the mixture to steam but NOT boil.
Add cream cheese and stir until completely dissolved and smooth.
Remove pot from heat and add in 4 cups of shredded cheese, stir until smooth.
Pour cheese over cooked macaroni and stir to combine.
Grease a 9" x 9"-inch baking pan with butter and pour macaroni and cheese into pan.
Bake in preheated oven for 25-30 minutes.
Top with additional shredded cheddar cheese (desired amount) and dashes of paprika.
