Black Forest Brownies


For the Brownies

1 cup pitted dates

¾ cup whole wheat pastry flour

½ cup unsweetened dark cocoa powder

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon sea salt

one 15 Oz. can black beans, rinsed and drained

¾ cup mashed ripe banana

½ cup unsweetened applesauce

1 tablespoon flaxseed meal

2 teaspoon vanilla

½ cup unsweetened dried cherries

¼ cup unsweetened coconut flakes

For the Frosting

3 tablespoons powdered sugar

2 ounces cream cheese softened

1/4 teaspoon almond extract

2 tablespoons heavy cream

1 bar dark chocolate (optional)

1 jar of maraschino cherry (optional)

For the Brownies

Preheat your oven to 350, then line a 9" x 9" baking pan with parchment paper.

In a bowl combine dates and ½ cup warm water, then let set 5 minutes to soften.

In another bowl sift next five ingredients.

In a processor or combine dates with liquid and next five ingredients, then process until smooth.

Add bean mixture and dried cherries to flour mixture.

Stir to combine, then spread batter in prepared pan and sprinkle coconut on top.

Bake 50 to 60 minutes or until a toothpick inserted in the center comes out clean and top starts to crack.

Cool on a wire rack, then cut into 16 brownies.

For the Frosting

Mix powdered sweetener with cream cheese.

Add almond extract and stir.

Add heavy cream and stir again until smooth.

(Top with shaved chocolate and charries, optional.) Enjoy!
