Blueberry Pecan Bars


For the Crumble and Crust

2 cup almond flour

1 cup crushed pecans

1 cup coconut sugar

1 tsp baking powder

1/4 tsp sea salt

1 large egg

2 tsp vanilla

8 tablespoons unsalted butter, cold and cut into cubes

For the Blueberry Filling

4 cups fresh blueberries

1 tbsp cornstarch

1/4 cup coconut sugar

2 teaspoons lemon juice

Preheat your oven to 350.

For the Crumble

Line a 9" x 13" pan with parchment paper and lightly spray with olive oil.

Combine crumble ingredients and stir until the mixture resembles a crumb topping.

Press 1/2 of the mixture into the pan and up the sides.

For the Blueberry Filling

In another mixing bowl combine the filling ingredients.

Spoon the blueberry mixture over the crust.

Sprinkle the remaining crumble over all, pressing down lightly.

Bake for 30 to 35 minutes until the top begins to brown.

Allow the bars to cool completely before slicing and serving. Enjoy!
