Butter Pecan Caramel Kringle


For the Base

½ cup (1 stick) butter, slightly softened, cut into pats

1 cup flour

½ teaspoon salt

¼ cup cold water

For the Topping

1 cup water

½ cup (1 stick) butter

½ teaspoon salt

1 cup flour

3 large eggs, room temperature

½ teaspoon vanilla extract

2 cups pecan halves

3 dozen soft caramel candies

1 to 2 tablespoons milk, at room temperature

For the Glaze

1 cup powdered sugar

1/8 teaspoon vanilla extract

Pinch of salt

1 to 2 tablespoons heavy whipping cream, at room temperature

Line a baking sheet that is 18" x 13" or a 14" pizza pan with parchment paper or a silicone baking mat.

For the Base

In a bowl, mix butter, flour and salt until crumbly, then add water and stir to make a soft, sticky dough.

Wet your hands, pick up the dough and shape it into a 12" x 8" oval ring on a sheet pan or a 10" ring a pizza pan.

Flatten the dough so the ring is about 1½ inches wide.

Preheat oyur oven to 350.

For the Topping

Put water, butter and salt in a saucepan and bring to a boil.

Pour the mixture into a bowl and immediately add flour, beating until mixture is cohesive and starts to form a ball.

Beat in eggs one at a time, making sure each is fully incorporated before adding the next,then beat in vanilla extract.

Spread the pastry along the ring, covering it completely.

Bake in preheated oven 50 to 60 minutes, until a deep golden brown.

Remove from oven and allow it to cool completely on the pan, and leave your oven on.

Toast pecan halves on a baking sheet in the oven for about 10 minutes, or until golden.pecan halves Be careful to not over brown the pecan halves, remove from oven and cool.

To add Pecans and Caramel

To add pecans and caramel, have pecans ready beside the pan of kringle.

Place the caramel along with the milk in a microwave-safe spouted measuring cup.

Melt the caramel in 60 second bursts until bubbly, remove from microwave, stir a few times to smooth out the bubbles and immediately drizzle it over the kringle.

If caramel stiffens up, reheat briefly in the microwave.

Immediately sprinkle pecans on of top the caramel, pressing them in gently, then allow the kringle to cool completely.

For the glaze

Stir powdered sugar, salt and vanilla extract, add heavy cream a teaspoon at a time until mixture reaches a pourable consistency.

Drizzle over the kringle, cool until set, and serve. Enjoy!
