Cauliflower Mushroom Steaks


1 large cauliflower head, sliced to 3/4 inch thick slices

avocado oil cooking spray

1 Tbsp avocado oil

1 Tbsp Italian seasonings

8 Oz. button mushrooms, sliced

2 fresh garlic cloves, crushed and minced

1 cup mozzarella cheese, shredded

sea salt and fresh ground black pepper, to taste

fresh thyme to garnish

Preheat your oven to 400, then line baking sheets with parchment paper and spray with cooking oil.

Place cauliflower slices onto baking sheets.

Leave lots of space between them and don't overlap and use 2 large baking sheets if needed.

Spray cauliflower steaks with the avocado oil and season with salt, pepper, and Italian seasonings.

Roast for 20 to 25 minutes,until golden brown and flip once during roasting time.

In a bowl add mushrooms, garlic, a pinch of sea salt and pepper, then toss to coat.

Saute mushroom mixture with 1 teaspoon oil over medium high heat for 5 to 6 minutes.

Sprinkle cauliflower steaks with cheese and top with sauted mushrooms.

Return to the oven for 2 to 3 minutes until cheese is melted.

Sprinkle fresh thyme over all and serve. Enjoy!
