Cheesy Spinach and Tomato Stuffed Chicken


2 large, boneless, skinless chicken breasts

3/4 cup Sun Dried Tomato Vinaigrette Dressing and Marinade

1/2 cup sundried tomatoes

1/2 cup spinach, roughly chopped

1/2 cup feta cheese

1/2 cup mozzarella cheese, shredded

Marinate chicken breasts in the dressing for 2 to 3 hours.

Preheat your oven to 375.

Carefully cut a slit in the chicken, but not all the way through.

Open breasts and layer on sundried tomatoes, spinach, feta and mozzarella.

Close chicken breast back over the filling and secure with a toothpick.

Sear meat in an oiled oven proof pan until golden on both sides.

Cover with foil and bake for 10 to 15 minutes, or until chicken is cooked through. Enjoy!
