Chicken and Cheese Muffins


8 large eggs

1/2 cup almond milk

1/2 teaspoon sea salt

a dash of pepper

1/3 cup coconut flour

1/2 pound chicken sausage of choice, or breakfast chicken sausage

1 cup shredded cheddar cheese, divided (or any cheese you like)

Serve with avocado chunks and salsa on top

Cook sausage fallowing directions on package.

Preheat oven to 400, then grease a 12 cup muffin tin with cooking spray.

Whisk together eggs, almond milk, salt and pepper.

Slowly add coconut flour, while still whisking.

Fold in cooked sausage and 1/2 cup shredded cheese.

Pour mixture into muffin tins, then sprinkle with 1/2 cup remaining cheese.

Bake for 15 minutes or until muffin puff up and eggs are set.
