Cranberry Quick Bread


1-1/2 cups all-purpose flour

3/4 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon baking soda

1 large egg

1/2 cup orange juice

2 tablespoons butter, melted

1 tablespoon water

1-1/2 cups fresh or frozen cranberries, coarsely chopped

Preheat oven to 350. Mix first five ingredients.

In a bowl, whisk egg, orange juice, butter and water. Stir into dry ingredients just until moistened.

Fold in cranberries.

Transfer to an 8' x 4" loaf pan coat with cooking spray and dust with flour.

Bake 45-50 minutes or until a toothpick inserted in the center comes out clean.

Cool 10 minutes before removing from pan to a wire rack.

Cool 20 minutes more on wire rack before slicing.
