Creamy Kale Caesar Salad


2 tbsp good quality mayonnaise

2 tbsp grated pecorino

1 tbsp apple cider vinegar

1 tsp capers

1 tsp mustard

1 tsp tamari or soya sauce

½ lemon, juiced

1 clove of garlic, minced

A pinch of fine Sea Salt and Pepper

1 medium bunch curly kale, leaves torn and stems discarded*

Simply whisk all the ingredients together and toss through the leaves.

Make sure everything is coated in the creamy sauce - this makes enough sauce for around 2 to 3 big salads.

You could serve this salad with some croutons, chickpeas and grilled salmon on the side.

* Optionally you could slightly steam the kale for 1 to 2 minutes to make it softer, but it's totally up to you. Enjoy!
