Deep Dish Apple Pie

This is the most delicious way to eat your fruit. Yum!
Ingredients:
For the Pie Filling:
2 medium apples, cored and diced
1 tablespoon unsalted butter
1/2 teaspoon cinnamon
1 teaspoon vanilla
1 tablespoon brown sugar
For the Crust:
1/2 cup butter, at room temperature
1 cup brown sugar
1 tablespoon vanilla
1 egg
1 cup flour
1/4 teaspoon baking powder
1/4 teaspoon sea salt
1 tablespoon cinnamon sugar
For the Topping:
1 Apple, cored and finely sliced
2 tablespoons unsalted butter
2 tablespoons brown sugar
Pinch of course sea salt
Directions:
Preheat your oven to 350, then lightly grease a 9" skillet with butter and set aside.
For the Pie Filling:
Combine all Filling ingredients in a small saucepan.
Bring to a boil; reduce heat and gently simmer while stirring, apples are soft.
For the Cookie:
Combine butter, sugar, and vanilla into a bowl and whisk until light and creamy.
Add the egg and whisk again until smooth.
In another bowl, mix the flour, baking powder and salt.
Using a wooden spoon, stir flour into the batter and slowly mix until combined.
Spoon 2/3 of the dough into the pan.
Pour the Apple Pie Filling over the cookie dough 1" from the edges.
Spoon the remaining dough batter over the top of the apple mixture and sprinkle with cinnamon sugar.
Bake for 35 to 40 minutes until a toothpick inserted into the center to test comes out with a few crumbs.
The pie will be moist and fudgy when taken out but it will set and firm as it cools.
Once cooled, cut into 12 slices.
For the Salted Caramel Topping:
Combine all ingredients into the same saucepan you used for the filling.
Bring to a boil; reduce heat and simmer until apples are soft and the caramel has thickened.
Serve with Topping. Enjoy!
