Dulce De Leche Cookies


1 cup plus 1 tablespoon flour

1 cup spelt flour

1 1/2 sticks cold butter, diced

1/3 cup powdered sugar

2 teaspoons vanilla, divided

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 cup dulce de leche

1/4 cup heavy cream

2 large egg yolks

1/2 cup dark chocolate chips

1/2 cup white chocolate chips

3/4 cup pecans, chopped 1 teaspoon coarse sea salt (optional)

Preheat your oven to 350, then line a baking sheet with parchment paper and spray with olive oil with cooking spray.

Pulse 1 cup flour and spelt flour, diced butter, powdered sugar, 1 teaspoon vanilla, salt and cinnamon in a food processor until the mixture starts clumping together, for 1 minute.

Remove dough from food processor and and using a small to medium size ice cream scoop, ladle out dough onto your baking sheet.

Put dough about 2 inches apart as it will spread as to cooks.

Bake cookies in your oven for about 8 to 10 minutes depending on size and crispness preferences.

Allow cookies to cool on the pan 5 minutes before moving to a wire rack. Enjoy!
