Easy Artisan Bread



4 cups all-purpose flour

1 tablespoon sugar, double this amount if desired

1/2 tablespoon baking powder

1/2 tablespoon baking soda

1 1/2 cup water, room temperature

2 teaspoons vinegar (cider or white)

1 tablespoon butter, melted

Preheat the oven to 400.

In a bowl, stir together flour, sugar, baking powder and baking soda. In a measuring cup, combine water and vinegar. While stirring, add water mixture to flour mixture. Stir the mixture to form dough.

Turn dough out onto a floured surface. Knead dough for 2-3 minutes.

Shape the dough into a flat, round disk no more than 1 1/2 inches high. Place it on a baking sheet. Dip a sharp knife into flour then cut an "X" on top of the dough.

Bake at 400 for 30-40 minutes or until golden brown and the crust is firm. If desired, brush the top of the loaf with milk halfway through the baking time for a softer crust.

When the bread is done, remove it from the oven and while still hot brush it with melted butter. Butter adds flavor and softens the crust.

If you want more flavor then double the sugar or add herbs and seasonings, like Italian spices or garlic. Make sure to form the loaf into a flat shape as directed. If it's too high it will not bake through.
