Easy Vegan Pumpkin Chili

 

Ingredients:

1 medium onion, diced

2 cloves garlic, crushed and minced

1 medium carrot, diced

1 rib celery, diced

One 8 Oz. can of cannellini beans

One 8 Oz. can of white corn

One 8 Oz. can of pumpkin, or 2 cups diced cooked pumpkin

1 Tablespoon of tomato puree

2 cups chopped tomatoes

1 cup water

1 pepper, finely chopped
(jalapeno, or pepper of choice)

green onions, diced

1 cup cheese, shredded

1 Avocado, peeled and sliced

salt and pepper to taste

Directions:

Fry onions and garlic in a soup pot with some oil.

Fry 2 minutes, add carrots, pepper and celery, then cook for 4 to 5 minutes.

Add pumpkin, beans and corn.

Season with salt and pepper.

Add tomato puree, chopped tomatoes and water, then lower heat to medium.

Simmer for 20 minutes then top with your favorite cheese and avacado slices to serve. Enjoy!
