Fruit Pizza

 
 
Ingredients:

For the Crust

8 tablespoons butter, melted

1 1/2 cup almond flour

2 tablespoons confectioners swerve sweetener

1 teaspoon vanilla extract

For the Frosting

6 ounces cream cheese

1/4 cup confectioners swerve sweetener

2 tablespoons heavy cream

2 tablespoons almond milk

1 teaspoon vanilla extract

For the Fruit

3 to 4 large strawberries, sliced thinly

1/2 cup blueberries

1/4 cup blackberries
Directions:

Preheat oven to 350.

For the Crust

In a bowl combine the melted butter, almond flour, sweetener, and vanilla until a soft dough forms.

Spray lightly with cooking spray, parchment paper on a pizza pan or baking sheet to make pizza easier to slice and remove.

Carefully press the crust into an even layer.

Put a silicone baking sheet on top of the crust and press or roll the dough into an even layer and then carefully, slowly peel the silicone off the dough.

The crust will be between 10 to 11 inches in diameter.

Bake the crust 6 to 7 minutes until lightly browned and completely set.

BE CAREFUL NOT TO OVERCOOK.

Cooking time may vary slightly depending on how thick you press your crust, then allow crust to cool.

For the Fruit and Frosting

In a food processor, blender or with a hand mixer combine the cream cheese, sweetener, cream, almond milk and vanilla and blend or mix until smooth.

Spread the cream cheese frosting on the crust and top with fruit.

Chill pizza in the freezer for 15 minutes before you cut, serve and enjoy!
