Fuyu Persimmon Radish Salad


For the Salad

½ head of radicchio; torn

3 to 4 heads Butter lettuce

1 to 2 apples, thinly sliced

1 to 2 Fuyu persimmons, thinly

1/2 cup baby radishes, halved

¾ cup cubed feta

½ cup sliced almonds

½ cup dried cranberries

For the Dressing

4 tablespoons olive oil

3 tablespoons balsamic vinegar

3 cloves garlic, crushed and minced

salt and pepper to taste

On a large dish arrange salad ingredients.

In a small bowl, whisk together ingredients for the dressing.

Drizzle dressing on top of salad before serving. Enjoy!
