German Chocolate Cake Cookies


For the Chocolate Cookies

1 cup butter, softened

1 cup brown sugar

1 cup coconut sugar

2 teaspoons vanilla

2 large eggs beaten

2 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

pinch sea salt

Coconut Pecan Frosting

1 cup evaporated milk

1 cup sugar

3 egg yolks

1/2 cup butter

1 teaspoon vanilla

1 1/3 cup sweetened shredded coconut

1 cup chopped pecans

1/4 cup chocolate candy coating

For the Chocolate Cookies

Preheat oven to 375, then line baking sheets with parchment paper.

In a bowl, blend butter, sugars, vanilla, and eggs.

In another bowl, mix flour, cocoa, baking soda and salt.

Add flour mixture to butter mixture and blend to combine.

Drop dough by tablespoonful onto baking sheets, 12 per sheet, bake 8 to 10 minutes.

Cool on a baking rack and set aside.

For the Coconut Pecan Frosting

Add evaporated milk, sugar, egg yolks, butter and vanilla to a large pan and place over medium heat.

Stir well to combine and continue stirring until thickened, about 10 minutes.

Once thickened remove from heat and add coconut and pecans.

Beat until spreadable.

Spread frosting over the cooled cookies.

Drizzle with melted candy coating and let set up.
