Huli Huli Chicken

 
 
Ingredients:

1/3 Cup ketchup

1/2 Cup brown sugar

1/2 Cup soy sauce

1 inch piece ginger root

3 cloves garlic

1 Cup pineapple juice

1/4 Cup rice vinegar

1/4 Teaspoon ground mustard

6 boneless, skinless, chicken thighs

Green onions , chopped for garnish

Grilled pineapple (optional)
Directions:

Crush the garlic with a meat mallet.

In a saucepan over medium heat, add all of the ingredients except the chicken.

Cook for 3 minutes and then set aside in a bowl to cool.

Add 3/4 of the sauce to a ziploc bag and add the chicken.

Place in the fridge for up to 30 minutes.

Heat a grill over medium high heat and add the chicken.

Turn the heat to medium and cook for 6 minutes.

Flip the chicken and cook an additional 6-7 minutes or until cooked through.

Serve with additional sauce and grilled pineapple.
