Lemon Cookies

Total Time: 1 hour, 20 minutes
Servings: 3 dozen
Soft, chewy lemon cookies with a little drizzle of lemony icing. Yum!
Ingredients:
For the Cookies:
2 Sticks Butter, softened
1 Cup Powdered sugar
1 Tablespoon Lemon zest, grated
1 1/2 Tablespoons Lemon juice
2 Cups Flour
3/4 Teaspoon Salt
For the Frosting:
1/2 Cup and 2 Tablespoons Powdered sugar
1 Tablespoon Lemon juice
1 Tablespoon Butter, softened
Grated Lemon zest, for garnish
Directions:
For the Cookies:
Preheat your oven to 350 and put racks in the upper and lower third.
Mix butter and sugar for 2 minutes.
Mix in zest and juice, then flour and salt.
To make the Cookies:
Roll half the dough into 1" balls.
Arrange the dough 1" apart on 2 baking sheets.
Flatten balls into cookies.
Bake for 6 minutes, and switch baking sheets from top to bottom.
Then Bake 6 minutes more.
Cool cookies on baking sheets, for 2 minutes.
Transfer to a rack and cool completely.
Cool baking sheets, then repeat with the remaining dough.
For the Frosting:
Mix sugar, juice, and butter until smooth.
Spread frosting on cooled cookies and garnish with zest.
Let stand for 15 minutes. Enjoy!
