Yam & Lentil Soup


1 cup lentils
3 cloves garlic, minced
1/2 yellow onion, chopped
1 yam peeled and cubed
1 1/2 cups Crushed Tomatoes
1 tsp red chili powder
1 tsp paprika
16 oz vegetable stock
salt to taste
black pepper to taste

Creamy and comforting Lentil and Yam Soup made in the Crockpot, so all you have to do it set it and forget it!

Add all the ingredients in a slow cooker and cook on high for 4 hours. Let the soup cool a little and blitz it with an immersion blender until smooth and creamy. Keep it warm in the slow cooker till you are ready to serve it.
