Ingredients:
2/3 cup granulated sugar
3 eggs at room temperature
1 1/2 teaspoons vanilla
3/4 teaspoon Sea salt
1 cup all purpose flour
10 tablespoons unsalted butter, melted and cooled slightly
3 tablespoons powdered sugar
2/3 cup granulated sugar

3 tablespoons powdered sugar
Directions:
Put sugar, eggs, vanilla and salt in a bowl and whip on high until doubled in volume and very pale in color for about 5 to 7 minutes.
Sift in 1/3 of the flour, then gently fold until combined.
Fold in 1/3 of the butter, until combined.
Repeat the previous 2 steps until flour and butter are incorporated.
Chill the batter for 1 hour or overnight.
Preheat your oven to 350, then grease a madeleine pan and dust it with flour, tap out excess.
Scoop 1.5 tablespoons of batter into each well of the pan.
Bake until puffed and golden brown around the edges and springy to the touch (about 10 to 12 minutes).
Transfer to a wire rack to cool and dust with powdered sugar. Enjoy!
