Marsala Meatballs


8 Oz mushrooms, sliced, divided

1 Lb ground chicken

1/3 cup seasoned bread crumbs

1/4 cup grated Parmesan cheese

1 large egg, beaten

3 garlic cloves, minced

2 tablespoons parsley, chopped

plus more for garnish

1 teaspoon Sea salt

Ground pepper

1/2 tablespoon flour

1/2 tablespoon butter

1/4 cup shallots, chopped

1/3 cup sweet white wine

3/4 cup chicken broth
Preheat oven to 400.
Chop half the mushrooms, transfer to a bowl.
Add chicken, breadcrumbs, cheese, egg, 1 clove garlic, parsley, 1 teaspoon salt and pepper.
Roll mixture into 20 meatballs, bake 15 minutes.
Whisk the flour, wine and broth.
Heat a large skillet.
Add butter, garlic, shallots, cook until golden.
Add mushrooms, 1/8 teaspoon salt and pinch of pepper,
Cook, stirring for 5 minutes.
Return meatballs to pot, pour wine over meatballs,
Cover and cook 10 minutes.
Garnish with parsley.
