Mediterranean Summer Salad


one 16 Oz. box farfalle pasta (bow tie)

3.5 Oz. baby spinach leaves, washed and dried

12 cherry tomatoes, cut into halves

1 medium cucumber, quarted and sliced

2 medium red bell peppers, sliced

1 avocado

1/2 red onion, sliced

6 Oz. olives, sliced

7 Oz. (200g) feta cheese, diced

Salt and pepper, to taste

Salad Dressing

1/2 cup olive oil

2 tbsp lemon juice

3 tbsp red wine vinegar

1 tsp mustard

1 tbsp sugar

2/3 tbsp parsley, finely chopped

3 garlic cloves, minced

2 tsp dried oregano

2 tsp dried basil

Salt and pepper, to taste


Cook pasta according to package instructions, then drain and rinse under cold water.

Prepare the Salad Dressing.

In a bowl add olive oil, lemon juice, vinegar, mustard, sugar, garlic, herbs, salt and pepper then whisk to combine.

Set aside until ready to use.

To assemble the salad

Add pasta, spinach, cucumber, pepper, tomatoes, olives, avocado and onion.

Add cheese, dressing and toss until combined.

Add more salt and pepper if needed. Enjoy!
