Mint Chocolate Chip Blondies


1 1/2 sticks, unsalted butter, melted then let cool

1 1/2 cups packed light brown sugar

2 large eggs, lightly beaten

1 tablespoon vanilla

1 teaspoon mint extract

6 to 9 drops green food coloring

1 1/2 cups (7 1/2 ounces) flour

1 teaspoon baking powder

1/2 teaspoon table salt

1 1/2 cup chocolate chips, for blondies

1/2 cup milk chocolate chips, to drizzle on top

Preheat your oven to 350, then grease a 13" x 9" inch pan with baking spray or butter and flour.

Add melted butter and brown sugar together then mix.

Add eggs, vanilla, mint extract.

Add green food coloring, add one drop at a time as needed.

Add flour, baking powder, salt and chocolate chips, then stir until just combined.

Bake for 22 to 25 minutes until the top is set but not browning, then let cool.

In a microwave safe bowl, cook 1/2 cup of chocolate chips in 30 second increments until melted.

Trim the corner of a zip lock bag a tiny bit, then squeez chocolate ribbons on top of blondies, in a back and forth motion.

Cut into 36 pieces. Enjoy!
