One Pot Cauliflower Basil Soup


4 tablespoons olive oil, divided

1 yellow onion, chopped

2 cloves, garlic minced

1 head cauliflower, chopped

1 stalk celery, chopped

1 apple, peeled and chopped

1 teaspoon smoked paprika

1/ 4 teaspoon pepper

2 1/ 4 cups veggie broth

1 can lite coconut milk

1 sage leaf, chopped

2 cups basil

4 cups spinach

1/ 2 teaspoon sea salt

In a large pot, heat olive oil over medium heat.

Add onion and garlic, then cook for 3 minutes, stirring occasionally.

Add cauliflower, celery and apple.

Cook for another 7 minutes, making sure to stir occasionally.

Vegetables should start to release a bit of moisture and start caramelizing slightly.

Sprinkle in paprika and pepper, then cook for an additional 3 minutes.

Add veggie broth, coconut milk and reduce heat to medium.

Simmer the soup covered, for 20 to 30 minutes.

While the soup is simmering, add basil, sage, spinach, 1/4 cup veggie broth,
and 2 tablespoons olive oil in a high speed blender, then blend until smooth.

After the veggies are done simmering, pour the basil liquid into the pot.

Add salt, then simmer for another 5 minutes.

Remove from heat, then use an immersion blender to blend the soup until smooth.

Top with extra coconut milk and parsley and serve. Enjoy!
