Orange Coconut Bread

Bake a tropical twist on a classic recipe. Yum!
Ingredients:
Bread
1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon sea salt
1 cup vanilla yogurt
1 cup sugar
3 large eggs
1 1/2 cups sweetened flaked coconut
1 tablespoon grated orange zest
1 teaspoon vanilla extract
1/3 cup olive oil
Glaze
1/2 cup powdered sugar
1 tablespoon orange juice
1 tablespoon sweetened flaked coconut
Bread

Glaze
1/2 cup powdered sugar
1 tablespoon orange juice
1 tablespoon sweetened flaked coconut
Directions:
For the bread
Preheat oven to 350.
Grease a 9" x 5" loaf pan with spray oil or use butter.
Whisk flour, baking powder, cinnamon, and salt in a bowl.
Whisk yogurt, sugar, eggs, coconut, orange zest and vanilla in separate bowl.
Pour yogurt mixture into flour mixture. Stir until just mixed.
Add olive oil and fold into the batter.
Pour batter into loaf pan and bake for 50 to 55 minutes or until a toothpick placed into the center of the loaf comes out clean.
Cool loaf in pan for 15 minutes then transfer to a cooling rack and cool completely.
For the glaze
Stir powdered sugar and orange juice together until smooth then drizzle over cooled bread.
Scatter coconut on top. Wait about 10 minutes for the glaze to set then serve.
