Pear, Pecan, Goat Cheese Muffins

 
 
Ingredients:

2 3/4 cups Gluten Free flour

3/4 cup pecans, chopped

1 tsp black pepper

1 tsp sea salt

3/4 cup Goat Cheese, cut into cubes

2 large pears peeled, cored and cut into small chunks

2 large eggs

1/2 cup grapeseed oil

1/2 cup milk

Handful of pecan pieces to decorate.
Directions:

Preheat your oven to 350, then grease a 12 hole muffin tin or line with paper cases.

Sift flour into a bowl and add chopped nuts, pepper, salt and cubes of cheese, then stir together well.

Next add pear, eggs, oil and milk.

Gently mix but don’t over mix or your muffins will be tough.

Spoon mixture into muffin tin / cases.

Top each muffin with nut pieces very gently pushed into the top.

Bake for 20 to 25 minutes.

Check with a tooth inserted into the centre, if it comes out clean, they are ready.

Let them cool in tin for about 5 minutes and then gently remove them to a wire rack to cool completely.

Serve with some cream cheese, butter or a platter of fresh sliced pears. Enjoy!
