Quick and Healthy Light Moussaka

Ingredients:
2 Tablespoons olive oil
1 medium onion, diced
1 pound lean ground beef
1/2 teaspoon pepper
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1 Tablespoon tomato paste
Salt to taste
2 or more eggplants
2 cups tomato sauce
2 cups low fat mozzarella cheese, shredded
2 Tablespoons olive oil

2 or more eggplants
2 cups tomato sauce
2 cups low fat mozzarella cheese, shredded
Directions:
In a fry pan on medium heat, add oil then saute onion for a couple of minutes.
Add ground beef, stir to break it apart while cooking and browning.
Add salt, tomato paste and half the tomato sauce.
Mix everything well and cook for 5 minutes.
Preheat your oven to 350.
While meat is cooking, cut each eggplant lengthwise in half.
Core eggplant halves to 1/2" thick.
Sprinkle with salt and pepper.
Top eggplants with meat mixture and put in a oven safe dish.
Pour remaining tomato sauce over eggplants.
Bake for 15 minutes or until almost done.
Remove eggplant and sprinkle with cheese.
Return eggplant to the oven to cook for 15 minutes and until eggplant is golden brown. Enjoy!
