Raspberry Flan



1/2 Cup All-purpose flour

1/4 Cup + 2 Tablespoons sugar

3 Large eggs

3 Tablespoons unsalted butter, melted

Zest of 1 lemon, finely grated

1/4 Cup + 2 Tablespoons milk

3 Cups Raspberries


Confectioners' Sugar, for dusting



Preheat your oven to 350.

Butter a 9" pie pan, then line it with a piece of parchment paper sprayed with olive oil.

Whisk flour, sugar, and a pinch of salt.

Whisk in eggs, butter, and lemon zest together until smooth.

Add milk and whisk until light and smooth, about 3 minutes.

Pour batter into the dish and top with raspberries.

Bake for about 30 minutes, until the flan is set and golden.

Let cool slightly.

Dust with confectioners' sugar.

Cut into wedges and serve. Enjoy!
