Roasted Sweet Potato Tacos


one can refried black beans

1 pound sweet potatoes, diced into 1/2" cubes

1 tablespoon avocado oil

2 teaspoons taco seasoning

fine sea salt and pepper

12 small tortillas

1 avocado, thinly sliced

toppings: chopped red onion, cilantro, lime wedges

Preheat your oven to 425, then line a baking sheet with parchment paper.

In a large mixing bowl, toss sweet potatoes with oil, taco seasoning and a pinch of salt and pepper.

Spread potatoes on your baking sheet in a layer. then bake for 25 to 35 minutes, turning halfway through, cooking until tender.

To assemble the tacos, fill each tortilla with beans, sweet potatoes, avocado and any of your desired toppings. Enjoy!
