Strawberry Banana Muffins


3/4 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon sea salt

2 large eggs, beaten

3/4 cup coconut sugar

1/3 cup coconut oil

3/4 cup milk

1 teaspoon vanilla

1 cup bananas, mashed

1 cup strawberries, chopped and some slices for topping.

Preheat oven to 400 degrees.

Line muffin pans with paper liners, (8) in one pan and (7) in the other.

Whisk together flour, baking powder, baking soda and salt. Set aside.

In a large bowl, whisk eggs, coconut sugar and oil until frothy (1 minute).

Whisk in coconut oil, milk, vanilla and banana.

Stir in dry ingredients until just mixed, then fold in strawberries.

Pour batter into the pans.

Top each muffin with sliced strawberry.

Bake for 15-20 minutes or until golden brown.

Remove from heat and cool for 10 minutes,

Remove muffins from pans and cool completely.
