Strawberry "Cheesecake" Parfaits

Ingredients:
For the "Cheesecake"
2 cups 2% plain Greek yogurt
1/4 cup sugar
2 large eggs
1 teaspoon vanilla
1 tablespoon of cornstarch
For the topping
4 cups strawberries, sliced
Splash of water
Honey to taste

Directions:
For the "Cheesecake"
Preheat your oven to 375, then put four 1 cup, oven safe, ramekins into a baking dish.
Add water to the dish so that it comes up the sides of ramekins, 1 inch but not over the top, then set aside.
Mix yogurt, sugar, eggs, vanilla and cornstarch until well blended.
Divide this mixture between the ramekins and bake for 25 to 30 minutes.
The tops will appear set and start to turn a light brown.
Cover ramekins and chill in the fridge for at least 4 hours.
Meanwhile, make strawberry topping
For the topping
Put sliced strawberries with a splash of water into a pan.
Cook over medium heat, stir until strawberries release juice and sauce starts to thicken, for 5 to 10 minutes.
Remove from heat and stir in honey.
Let strawberry sauce cool.
Then, divide it evenly on top of the cooled cheesecakes. Enjoy!
