Stuffed Bell Pepper Soup


2 Cups Brown Rice, cooked
1 Lb Ground Beef, 95% lean
2 Oz Chorizo Sausage, casing removed.
1/2 Cup Yellow Bell Pepper, chopped
1/2 Cup Red Bell Pepper, chopped
1 Cup Onion, finely diced
3 Cloves Garlic, chopped
2 Cups Tomatoes, diced
2 Cups Chicken Broth
1/2 tsp Dried Marjoram
Tortilla Strips

In a large pot or dutch oven, brown ground meat on high.
Drain fat, reduce heat to medium, Add peppers, onions and garlic.
Cook about 5 minutes on low heat.
Add tomatoes, tomato sauce, chicken broth, marjoram.
Add Chorizo Sausage.
Cover and simmer on low heat for 30 minutes.
Serve about 1 1/2 cups of soup in each bowl.
Top with Tortilla Strips.
