Sweet Jig Bars


For the Crust:

4 tablespoons butter, melted

1/2 cup almond flour

1/4 cup coconut sugar

For the Filling:

7 to 10 fresh figs, chopped

1/3 cup coconut sugar

For the Topping:

1/3 cup oats

1/3 cup almond flour

1/3 cup pecans

1/3 cup coconut sugar

1/2 teaspoon cinnamon

2 tablespoons butter, melted

Pinch of fine sea salt

For the pork

Preheat to 350 degrees.

For the crust:

Line a 9" x 9" baking pan with parchment paper, then lightly spray with baking spray and set aside.

Combine crust ingredients: melted butter, sugar and almond flour until a soft dough is formed.

Place into pan and bake for 6 minutes, until the crust is a light crispy brown.

Put chopped figs and sugar into a saucepan over medium-high heat, stirring and breaking up the figs.

As soon as the mixture begins to simmer reduce the heat to low and stir occasionally.

Cook this mixture (about 20 minutes) when it resembles jam, remove from heat and allow to cool a few minutes.

For the topping:

Combine all of the crumble topping ingredients and mix in a blender until blended.

Spread the fig mixture over the crust and top with the crumble topping.

Bake for 20 minutes, let cool, then slice and enjoy!
