Sweet Potato Salad


1 large sweet potato,
cut into 1/2 inch pieces
1 tablespoon olive oil
1/2 teaspoon cumin
dash of salt
3 ounces mixed baby greens
1 cup black beans
3/4 cup frozen corn, thawed
3/4 cup chopped avocado
1/2 cup chopped red onion
3 tablespoons chopped cilantro
juice from one lime
1/4 cup dressing of your choice

Preheat the oven to 425° F.
Line baking sheet with parchment paper.
Spread sweet potatoes on lined baking sheet.
Drizzle with olive oil, add cumin and salt.
Toss potatoes and bake for 25 to 30 minutes
Remove from oven and cool.
stur potatoes, greens, black beans, corn, avocado, red onion, cilantro and lime juice.
Drizzle dressing and toss until combined.
