Tilapia Florentine

Put a heart-healthy fish into your family's weekly diet with this quick and easy entree. Topped with fresh spinach and a splash of lemon, it's sure to become a favorite. Yum!
Ingredients:
4 (5 Oz.) pieces of Tilapia
1 Tbs olive oil
1 Tbs butter
1 cup red bell pepper, chopped
2 cloves garlic, minced
9 ounces fresh baby spinach
2 ounces cream cheese
1/4 cup cream
3 Tbs grated Parmesan cheese
salt and fresh ground black pepper
2 tablespoons lemon juice
Directions:
In a large fry pan over medium heat add 1/2 tablespoon of olive oil and 1/2 tablespoon of butter, red bell pepper, and garlic then cook for about 4 minutes.
Add spinach season with a pinch of salt and pepper, and stir until the spinach wilts down.
Add cream cheese, cream, and Parmesan cheese, then stir well until cream cheese is melted.
Heat a separate fry pan on medium-high heat, and add the remaining oil and butter.
Season fish on both sides with salt and pepper and place on the hot pan.
Cook for 6 minutes on the first side flip the fish and cook for 5 minutes.
Divide the spinach mixture on each plate and top with a piece of fish, then drizzle with lemon juice. Enjoy!
